Paula Cook, RD, LD
Paula Cook, RD, LD is the Director of Dietary Services at Nacogdoches Memorial Hospital for 18 years. Paula has been a RD since 1984 and has been a ETAND member since 1994 when she moved to Nacogdoches. She has been treasurer, Vice President, President and served on the nominating committee for ETAND. Paula feels ETAND is so important for Registered Dietitians professional growth and for networking! She has also served on the SFASU Advisory Committee for both the DPD program and the Dietetic Internship Program.
Paula is originally from Omaha Nebraska and received her undergraduate degree from University of Nebraska at Kearney. She has two daughters , one at the University of Arkansas and the other graduating from high school next month and attending University of Texas at Arlington.

Paula serves on the Healthy Nacogdoches Coalition where she participates on the nutrition committee. The nutrition committee has been working in several areas and last year they completed the healthy dining guide for Nacogdoches, identifying healthy options at many local restaurants. They have also been actively promoting breastfeeding and have worked with the city to provide a breast feeding area in conjunction with all of our downtown festivals throughout the year and working with employers who are interested in becoming Breast Feeding Friendly. They have coordinated efforts with the Farmers Market by holding the third annual Spring Fling to promote the Fresh, local produce that is available. The Coalition is working on transportation barriers that prevent people from utilizing the farmers market, and they are trying to bring a ‘mini-market’ to large employers. The Coalition is always promoting healthy activity and diet at festivals and events, sponsoring 5Ks, and giving out fruits at our Halloween Scare on the Square.
Paula has worked with other RD’s on the Healthy Nacogdoches Coalition. They are Caroline Sullivan, Susan Bennett, Gretchen Stryker, Vanessa Hooper, Nancy Hill, and Brenda Marques. The Coalition chair keeps 2 – 4 RD’s on the committee at all time. She is glad to be a part of a coalition that regards Registered Dietitians as the nutrition experts.

Caroline Sullivan, MS, RD, CSSD, LD is the Campus Dietitian for Aramark at Stephen F. Austin State University. Caroline lives in Nacogdoches and is a member of the Healthy Nacogdoches Coalition, a group of professionals with special interest in promoting health in the community. This summer, she helped in the creation of the Healthy Nacogdoches Approved program. This new program features a healthy dining guide for local restaurants and a partnership between the Healthy Nacogdoches Coalition and local businesses to promote healthy eating. She became the Texas Dietetic Association Political Action Committee Chair in April 2011. Caroline assists in fundraising for the TDA Political Action Committee to support the legislative interests of TDA. She also coordinates the annual silent auction at TDA FNCE, an event that is important to TDA PAC fundraising. Don't forget to help ETDDA build a fantastic basket to auction off at TDA FNCE!
